Caesar salad is often a family favorite because it is the perfect balance of creamy and crunch. First created in 1924 by Italian immigrant, Caesar Cardini, the Caesar salad has filled many salad plates over the last near-century.
Here is secret recipe for Caesar Salad that is sure to be passed down for many years:
Dressing
4 cloves garlic, crushed
8-10 inches of anchovy paste
2 dashes Worcestershire sauce
1 tablespoon fresh ground pepper
1 lemon, juiced
2 eggs, coddled (boil for 45 seconds – that will leave the whites attached to the shell so you just get the yolks)
2 tablespoons red wine vinegar
6 tablespoons extra virgin olive oil
Put all of the above in a large salad bowl and mix thoroughly.
Add 1-2 cups fresh grated Romano or Parmesan cheese, as desired. Mix thoroughly.
Add 2 large heads of romaine lettuce, hand torn into bite-sized pieces. Be sure to dry the lettuce well before you tear it.
Add croutons to taste (store bought are just fine).
Then, the secret step: “Toss longer than seems necessary.”
