2 ears of fresh corn, husked
1 medium red onion
1 tablespoon extra virgin olive oil

1 teaspoon of black pepper
2 jalapeños, seeded for less heat (leave seeds for more heat, if desired)
1 clove of garlic
1 lime
½ cup chopped cilantro
